Oatmeal Chocolate Chip Cookies

I got this recipe from the foods teacher at my junior high. Her grade 8's made them today and they were so delicious that I came home and made some of my own.

You substitute half the fat with applesauce. You can't taste a difference, and they are delicious and moist.

yield: 3 dozen cookies (I made more like 28)

Preheat oven to 350 F.

1/2 c. butter or margarine
1/2 c. applesauce
1 c. brown sugar
1 egg
1/4 tsp. vanilla
1 c. flour
1 tsp. baking soda
2 1/2 c. rolled oats
3/4 c. chocolate chips (can substitute with raisins, etc)

Cream butter or margarine with applesauce.
Add brown sugar, egg, and vanilla. Beat until smooth and light.
Stir in flour, baking soda, rolled oats, and chocolate chips.

Drop batter onto an ungreased cookie sheet. Bake for 12 minutes.

What does the applesauce substitute for? Butter? Can you do that with every recipe?
