The Everyday Way

Yesterday they opened up a new leg of the LRT (Light Rail Train) in Edmonton. To celebrate, the city had a grand opening where you could ride the train for free between the new stops and go on a few tours. Taking advantage of anything free, Chris and I went down to check out the new stops. They should hopefully make taking transit to school much easier for Chris next year. We also went on one of their tours of a new bus garage. We got to see where they are stored, fixed, and cleaned. It was actually pretty cool. The entire garage is about 7.5 acres. They were selling popcorn and burgers and stuff, but we came prepared with our own popcorn that we ate while we rode. Here are some pics of our little Saturday adventure.

A Fly on the Wall

Yesterday I subbed at a high school that has a great culinary arts program. They have a full kitchen and the students do all the cooking for the cafeteria and any special meals or events the school puts on. All I did was watch it all happen. They have three chefs in there that help them and tell them what to do, so I just felt like a fly on the wall watching it all take place. It was really fun. They made everything from pizza and subs and soups, to fancy breads, buns, cakes, and cookies. A few of the students are preparing for the Skills Canada competition where they compete against other students from other schools. I was so impressed at what they were making. One girl made this stuffed pork tenderloin with mango salsa, and the presentation was amazing! It made me really want to take a culinary class and was probably my favorite sub day.

Grilled to Perfection!

When Mom and Dad visited last month they left us with lots of good groceries, and a pork tenderloin. I have never cooked pork tenderloin before so I searched the internet for a recipe to try. I came upon this one for Grilled Chili Pork Tenderloin and Pineapple. So tonight we tried it out and it was absolutely delicious. Spicy, but sweet with the grilled pineapple. The pork was juicy and tender. This is definitly a recipe we decided we would have again!

The View from Saturday

I just finished reading "The View from Saturday" by E. L. Konigsburg, 1997 Newbery Medal Winner. I quite enjoyed it. She is also the author of "From the Mixed-Up Files of Mrs. Basil E. Frankweiler" 1968 Newbery Medal Winner. I got the idea of reading Newbery books from Jill, but I am not as avid a reader as her to try and read them all!

Getting Ready!

When I visited Winnipeg and Minneapolis in February I took advantage of some outlet malls and good deals and picked up a bunch of baby stuff (all gender neutral - especially since back then we didn't know the sex). Here are some of the goodies I got.

The quilt is the one I made, now you can see the backing on it. I also made the two orange bean bags as well as the mickey mouse one.

Since then I have got a few more items. The Easter bunny also left us a sleeper and two books at Grandma Lamont's which was fun. Buying baby stuff is great, it is hard not to get carried away!

Family Home Evening

Since Chris has a short break from Monday night soccer games, we have been trying to have family home evening again. Last Monday after a short lesson we played 'Harry Potter Scene It' and had homemade chocolate chip cookies. Last night we took down our bikes and went for a bike ride. After we put together and ate homemade oreo cookies, complete with cream cheese icing (leftover from the cinnamon buns). Mmmm, they were delicious!

Easter Weekend

It is a good thing that I am pregnant and that I wasn't competiting in the weigth portion of the biggest loser because I would have been terrible this week. I think all we did was eat! On Thursday night Chris and I went out to eat (something we rarely do) and it was delicious. We went to a place called Sorrentino's. Chris got a fancy pepperoni pizza and I got Alaskan Sole with crab and scallops and creamy garlic mashed potatoes. It was so good! On Friday, after swimming with the Leishman's (Chris' sister's family) we went to Beaumont and had chicken parmisean with noodles and garlic toast and I ate too many to count homemade oatmeal cookies. On Saturday morning I made cinnamon rolls for conference. Saturday night before priesthood session we went for pizza with all of Chris' family and then I ate more cinnamon rolls for dessert (with cream cheese icing). Sunday the Easter bunny visited us with lots of chocolate and goodies. We went to Beaumont for dinner and had steak and salmon (not a traditional Easter dinner, but I guess I do live in Alberta, Beef Country!) with angel food cake, cream, and strawberries for dessert. What a weekend!
