Rhubarb Sour Cream Pie

We had the missionaries for supper Sunday and had Cafe Rio Burritos (soooo good!!!) and this Rhubarb Sour Cream pie, which turned out delicious. Mom has a recipe very similar, but I found this one online. Probably my favorite way to make a rhubarb pie, especially delicious for those who don't like so much of the pie pastry.


Rhubarb Sour Cream Pie
1 (9 inch) unbaked pie crust
4 cups chopped fresh rhubarb
1 egg
1 1/2 cups white sugar
1 cup sour cream
1/3 cup all-purpose flour

1/2 cup all-purpose flour
1/2 cup brown sugar
1/4 cup butter, melted


Directions

Preheat the oven to 450 degrees F (220 degrees C).
Press the pie crust into a 9 inch pie pan. Spread rhubarb in an even layer in the bottom of the crust. In a medium bowl, whisk together the egg, white sugar, sour cream and 1/3 cup of flour until smooth. Pour over the rhubarb.
In a small bowl, mix together 1/2 cup of flour and brown sugar. Stir in melted butter until the mixture is crumbly. Sprinkle over the top of the pie.
Bake for 15 minutes in the preheated oven, then reduce the heat to 350 degrees F (175 degrees C). Continue to bake for 40 minutes, or until the edges have puffed, and the topping is golden. The center may still be slightly jiggly. Cool completely before slicing and serving.

In the Sick House

We've all been sick this week and it has not been fun! Macy has been a trooper about it though and I think is doing the best out of all of us, which is good with me. Here's hoping to a better and healthier week!!

This year with some of our Tax Return money we bought a bike trailer for Macy. I am very excited to use it lots this summer. So far we have only been out once, but that fact that we keep getting snow storms every week (which then melts again entirely before the next snowfall) has been preventing us. Hopefully we will have more sunny days ahead of us to ride in style!

Easter!

We had a lovely and busy Easter weekend. On Friday we had dinner at Grandma and Grandpa Lamont's where we played with the visiting Leishman's and Steve and Crystal with their new (1.5 week old) baby Clark. Saturday morning we painted eggs with our good friends the Anderson's. Their boy Ethan is a year older than Macy and he was really excited about colouring the eggs, which of course made it all the more exciting for us!

This finished product. Personally I love painting eggs. Chris and I have even painted them ourselves one year way before Macy.
Macy greeting Easter morning with her lovely morning hair! We had hard boiled eggs, toast, and orange juice for breakfast on Sunday...and of course chocolate! It was also the end of Lent for me. Yay!! Sunday we went to church in Spruce Grove for Clark's baby blessing and then headed to Steve and Crystal's acreage for a family dinner. I brought a Skor Cake for dessert which was SO divine! On Monday we went swimming with the Leishman's (no pictures this time) and then went out for Fish and Chips for dinner. We hope you all had a fun weekend with family and friends. Happy Easter!

Soccer

Chris and I played indoor soccer again this year and our team even got new jerseys last season (Jan-Mar). Plus we got moved up to the Rec Plus league, which has better players and teams. We did pretty good considering and I even scored once! (Chris scores all the time, and same with most of the other players, but I'm new to soccer, and everyone else has played almost their whole lives)

We're sad the season is over, but plan to pick-up baseball on Chris' work team in Fort McMurray!

Here's what I did today..

I have recently decided to put to use all the great yarn I got from my Grandma Cutts and start doing some crocheting. I have only done a dish cloth before, but my new goal is to do hats (great for the many babies born around here). So between conference sessions I did up a practice one for Macy's baby, she loves it!
